☆ Chicken Jalfrezi ☆ (On Special Request)

Preparation Time: 15 minutes
Cooking Time: 20 minutes

Ingredients:____________________

> 550 grams cooked chicken breasts, cut into bite-sized
pieces
> 150 grams frozen broad beans.
> 150 grams tomatoes, peeled and chopped
> 100 grams onion, chopped finely
> 1 teaspoon mustard oil
> 50 ml cooking oil
> 3-4 garlic cloves, crushed
> 50 grams red bell pepper, chopped
> 1 tablespoon tomato puree
> ½ teaspoon ground turmeric
> ½ teaspoon cumin seeds, ground
> ½ teaspoon coriander seeds, ground
> Chilli powder and salt to taste
> ½ teaspoon garam masala
> 1 teaspoon vinegar
> Fresh coriander sprigs, to garnish

Preparation Method:_____________________

1. Heat the mustard oil in a large frying pan set for about a minute or until its begin to smoke.

2. Add the vegetable oil and simmer to low flame.

3. Add the onion and the garlic, fry until they are golden.

4. Add in all ingredients except the bell pepper, broad beans and chicken to the fry pan. Stir the mixture until fragrant.

5. Add in the red bell pepper and broad beans and stir for about 3-5 minutes or until the bell pepper is softened.

6. Stir in the chicken and adjust seasoning with salt to taste. Simmer gently for about 5-7 minutes or until the beans are tender.

7. Garnish with coriander and serve.
