Sour Green Chilli Chutney

 Ingredients:

Thick green chilies 1/2 kg long 
Tamarind 1/2 kg 
Gur / molasses 300 g 
Cumin seeds 3 tsp 
Salt 2 tsp 
Oil 1/2 cup

 Method:

Make a slit in the green chilies lengthwise on one side taking care not to cut through to the other side. 
Remove seeds. Wash well and put in a strainer. 
Mix 1 tsp each cumin seeds and salt and stuff the slit chilies with it. 

Soak tamarind in hot water, mash with fingers, remove seeds and strain through a sieve and use the pulp. 
Heat oil, add chilies and fry for a few seconds turning the chillies frequently so that they do not brown. 
Add 2 tsp cumin seed and 1 tsp salt. Fry for a minute or two. Add ground molasses and tamarind. 
Simmer for 10-12 minutes. Remove from heat. 
When cold serve with dal chawal (lentils and rice) or fish curry and khichri. 



Imli ki chutney

Ingredients:
 
1 1/2 ounce Imli 
1 ounce Sugar 
1 cup water 
2 tsp Raisin (kish mish) 
1/4 spoon red chili powder 
Salt to taste 
Few drops of red food color

 Method:

Soak and put the Imli in water for 12 hours or enough time for Imli to 
go soft. 
Remove seeds. 
Put it on the stove in a pot with all your ingredients for ten minutes. 
Now put in grinder and grind it till paste. 
It is now ready to be served with Samoosa or Pakora.


Mint Chutney

 Ingredients:

2 cups Mint leaves -- fresh 
1/4 teaspoon Ground red pepper 
1/4 teaspoon Salt 
2 tablespoons Water 
1/4 cup Sugar 

 Method:

1-Put everything into an electric blender and mix well. 
2-Serve with pakoras and samosas.

Ramadan Special Recipes Chicken Bhajias

Ingredients
  • 3 Chicken breast cut into tiny pieces
  • 1 tsp Salt
  • 2 tbsp Semolina
  • 2 tbsp Gram flour
  • 1 tsp Green chilies ground
  • 1 tsp Coriander seeds crushed
  • ½ tsp White cumin seeds ground
  • 1 Onion grated
  • ¼ cup Coriander leaves chopped
  • 1 tbsp Mint leaves chopped
  • 1 tsp Crushed red pepper
  • 2 Eggs beaten
  • 1 tsp Baking powder leveled

Directions

  1. In a bowl mix together chicken pieces with 1 tsp salt, 2 tbsp semolina, 2 tbsp gram flour, 1 tsp ground green chilies, ½ tsp white cumin ground , 1 tsp coriander seeds crushed, 1 grated onion and 1 tsp crushed red pepper, mix well, just before frying add 2 beaten eggs to the mixture with 1 tsp baking powder, fry in deep oil till golden.

GOBI PAKORA RECIPE


Ingredients:

• 1 Cauliflower 
• 1 Cup Besan 
• 1/2 tsp Red chili powder 
• 1 Cup water 
• 4 Cups oil 
• 1 tsp Mango powder 
• Salt to taste

How to make Gobi Pakora:

Wash Cauliflower and cut into pieces.
Add water to besan and make a thick batter.
Add red chili powder,mango powder.
Blend it well.
Heat the oil.
Dip each piece of cauliflower in batter.
Fry these pieces one by one till they turn golden brown.
Serve hot Gobhi Pakora with green chutney.

Chicken Shawarma

Ingredients

  • For Pita Bread:
  • Self raising flour 250 gram
  • Flour 125 gram
  • Yeast 7 gram
  • Salt 7 gram
  • Milk 225 liter
  • Sesame oil 60 gram
  • For Salad:
  • Vinegar 1 cup full
  • Julienne carrot 1
  • Julienne cucumber with skin 1
  • Julienne Beetroot 1/2
  • Salt a pinch
  • For Chicken:
  • Julienne chicken breast 150 gram
  • Oil 2 tbsp
  • Garlic 1 tsp
  • Crushed red chili 1 tsp
  • Salt per taste
  • For Humus:
  • Chickpea 1 cup (boiled)
  • Black pepper 1/2 tsp
  • Curd 250 gram
  • Salt a pinch
  • Tahini sauce 2 tbsp

Cooking Directions
  • For Pita Bread: Combine both the flours, yeast, salt and mix well.

  • Then add some milk to it and make sure that salt and yeast grains are fully mixed.

  • Then add the rest of the milk and sesame oil steadily. Knead well.

  • Now to properly knead the dough, put it on the shelf, use oil to knead if dough is too sticky as it will be very soft.

  • When oil is properly mixed with the dough, sprinkle some flour on the counter and knead the dough so that it becomes bit soft and firm. Leave aside for 10 minutes.

  • Preheat oven at 180 degree C.

  • Make medium size balls of the dough.

  • Now spread out the balls on floured surface, in desired size round breads with the help of a rolling pin.

  • Place the breads on a greased baking tray.

  • Place the tray on the lower rack of the oven.

  • Bake the pita bread for 8–10 minutes. Watch from the oven glass that the bread has risen.

  • For Salad: Heat vinegar in a pan and add carrot, cucumber and salt to it.

  • When tender or little soft take out of the vinegar and keep aside.

  • Now add beetroot to the vinegar and cook for a while and then takeout.

  • For Chicken: Heat oil in a pan and sauté garlic and add chicken, salt and red chili.

  • Cook till chicken is done.

  • Foe Humus: Put chickpea, tahini sauce, salt, black pepper and curd in a blender and blend well.

Homemade Oil For Reducing Tummy!

Most of the women are stressed due to a tummy bulge these days. So here we are with a simple tip that will not only help you for controlling tummy bulge, but also help you for reducing it till getting fine belly.

Take 250 gm grape juice and mix it with 750 gm virgin olive oil. Now pour this mixture in a bottle and leave it under the sun for a week. Do remember to shake the bottle twice a day during that sunbath week. After a week, strain it in a muslin cloth and preserve the oil in a clean glass bottle. Now massage your belly with this oil daily and watch your belly come back in shape.

Make Your Own Almond Milk Lotion!

This is suitable for all skin types but particularly useful for those with normal to dry, dry or ageing skin. It’s quick, easy and cheap to make. Apply the lotion morning and evening to clean skin and let it work its magic.


Ingredients 
• 40g ground almonds (almond meal)

• 1.5 tablespoons of organic honey

• 400ml of still bottled water

Method:

Add the honey and almonds to the water. Stir until the honey has dissolved. Leave to rest for 2.5 hours. Filter and pour into a covered bottle (I once used a small airtight lunch box). Store it in the fridge.

Home Made Face Polish Whitening Mask etc

FACE POLISH/SKIN POLISH:
Ingredients:
Honey 1 tea spoon
Dry Milk 1 tea spoon
Gram Flour(Baisin) 1 tea spoon
Turmeric(Haldi) 1 pinch
Lemon juice ½ tea spoon
Method:
If you have dry skin, mix the paste with glycerin.
If oily skin, mix with rose water.
Apply on face and neck for 10- 15 minutes and then wash off.

WHITENING MASK:
Ingredients:
Ground Almond with skin 1 tea spoon
barley flour(Jao ka Atta) 1 tea spoon
Almond oil ¼ tea spoon
Rose water as required to make a paste
Poppy Seeds(Khash Khash) 1 tea spoon
Method:
Mix all ingredients and make paste using rose water.
Keep for a few minutes then take off while rubbing gently.

WHITING LOTION:
Ingredients:
Turmeric powder a pinch
Cucumber juice 1 tea spoon
Clay powder as required to make a paste
Almond oil as required for massaging
Method:
To make cucumber juice, take cucumber and grind with little water.
Mix turmeric powder and cucumber juice.
if you suffer from acne then add clay powder.
Apply to face and neck.
Wipe out and then massage with almond oil.
